Harmless Creamy Garlic Chicken with Spinach
A rich, hearty plant-based meal made with tender Harmless vegan chicken and sautéed spinach in a luscious, Easy creamy garlic sauce.
Ingredients

1 tbsp olive oil

2 cloves garlic, minced

1 cup Harmless vegan chicken pieces

2 cups fresh spinach

1 cup unsweetened plant-based milk (Soy or Oat)

2 tbsp nutritional yeast

1 tbsp flour (or cornstarch for a gluten-free option)

Salt and pepper, to taste
Instructions

Sauté the garlic:
Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant. -
Cook the vegan chicken:
Add Harmless chicken pieces to the skillet. Cook for 4–5 minutes, turning occasionally, until lightly browned. -
Add the spinach:
Toss in the fresh spinach and cook until wilted, about 2 minutes. -
Make the creamy sauce:
In a small bowl, whisk together the plant-based milk, nutritional yeast, and flour (or cornstarch) until smooth. -
Combine and simmer:
Pour the sauce into the skillet. Stir well and simmer for 4–6 minutes, or until the sauce thickens to a creamy consistency. -
Season and serve:
Season with salt and pepper to taste. Serve warm on its own or over pasta, rice, or mashed potatoes.
