Vegan Maple Glazed Chicken

For the Crispy Chicken

200–250g Harmless Chicken

½ cup cornstarch

½ cup flour
-
½ tsp baking powder

¼ tsp salt

¼ tsp black pepper

½ cup cold water (adjust as needed)
For the Maple Glaze
-
3 tbsp maple syrup
-
1 tbsp soy sauce
-
1 tbsp tomato paste
-
1 garlic clove, minced
-
1 tsp olive oil or sesame oil
-
½ tsp smoked paprika
-
¼ tsp cayenne (optional)

1 tsp cornstarch + 1 tbsp water (slurry)
Instructions

Make the Batter
In a bowl, mix cornstarch, flour, baking powder, salt, and pepper. Gradually whisk in cold water until the batter is thick and smooth. Coat Harmless Chicken pieces evenly. -
Fry the Chicken
Heat oil in a pan over medium-high. Fry the coated chicken for 3–5 minutes per side, until golden and crispy. Drain on paper towels. -
Prepare the Glaze
In a pan, sauté minced garlic in a bit of oil until fragrant. Add maple syrup, soy sauce, tomato paste, paprika, and cayenne. Stir and bring to a simmer. Add the cornstarch slurry and cook until thick and glossy (about 1–2 minutes). -
Glaze the Chicken
Toss the fried Harmless Chicken in the glaze until well-coated and sticky.
Serve
Top with sesame seeds. Great with rice, in wraps, or over steamed greens.
