Lazy Lunch - Harmless Chicken Pesto Pasta
A quick and flavourful plant-based pasta dish perfect for busy days. Enjoy warm or cold!
Optional: Add Soya Cream for more saucy version.
Ingredients:

225g Harmless chicken

2 cups cooked pasta (penne or fusilli work great)

½ cup cherry tomatoes, halved

2 tbsp vegan pesto (Ours is Genoese)

1 tbsp olive oil

Salt & pepper to taste
Instructions:

Heat olive oil in a skillet over medium heat. Add Harmless chicken and cook until golden brown.

Add halved cherry tomatoes and sauté for 2-3 minutes until softened.

Stir in cooked pasta and vegan pesto.

Toss everything together until well coated.

Season with salt and pepper to taste. Serve warm or enjoy chilled as a pasta salad!
