Instructions

Prepare the Slow Cooker
Lightly grease a 2.5–4 quart slow cooker. Place the 250g Harmless Food Co Chicken inside. -
Season the Chicken
In a small bowl, mix together:-
¼ tsp salt

¼ tsp Italian seasoning

Pinch of paprika

Pinch of black pepper
Sprinkle this seasoning evenly over the chicken.

Make the Sauce
In a medium bowl, whisk together:-
¾ cup plant-based cream (e.g., soy or oat-based)

2 tsp minced garlic
-
¼ tsp salt

Pinch of black pepper
- 1/3 cup water* if too dry
Stir in:

⅓ cup chopped sundried tomatoes

2 Tbsp vegan parmesan cheese

Combine in Slow Cooker
Pour the sauce mixture over and around the plant-based chicken in the slow cooker. -
Cook
Cover with the lid and cook on low for 1.5 to 2 hours, or until the plant-based chicken is heated through and the sauce has thickened. (Note: Plant-based meat doesn’t need as long as real chicken; check for doneness per package instructions.)The sauce may separate slightly — just stir well before serving.

Finish with Spinach
Stir in 1 cup chopped fresh spinach and allow it to wilt for a few minutes before serving. -
Serve
Spoon over pasta, rice, or your favourite grain. Enjoy!
