Vegan Hot “Honey” “Chicken” Salad

 Vegan Hot “Honey” “Chicken” Salad  🌱

Ingredients

For the Salad:

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 250g Harmless Chicken

  • 1 ripe avocado, diced

  • ½ cup corn kernels (fresh or grilled)

  • ¼ cup red onion, finely chopped

  • Juice of 1 lemon

  • Salt and pepper, to taste

For the Hot Honey Salad Dressing:

  • ¾ cup light agave syrup (or substitute maple syrup)

  • 2 tsp crushed red pepper flakes

  • ¼ tsp ground cayenne pepper (optional, for more heat)

  • Pinch of salt

  • 1 tsp lemon juice


 Instructions

1. Prepare the Hot Honey Dressing:
In a small bowl or jar, combine agave, crushed red pepper flakes, cayenne (if using), salt, and lemon juice.
Whisk vigorously for about one minute until emulsified and thickened into a silky, uniform texture.
Set aside.

2. Cook the Chicken:
In a skillet, heat olive oil over medium heat.
Add minced garlic and sauté for 30 seconds.
Add Harmless Chicken and cook until browned and slightly crispy.

3. Assemble the Salad:
In a large bowl, combine the cooked Harmless Chicken, diced avocado, corn, and red onion.
Drizzle with fresh lemon juice, season with salt and pepper, and gently toss to combine.

4. Finish with Dressing:
Drizzle your desired amount of the hot honey dressing over the salad just before serving.


Pro Tip:

The hot honey dressing also makes a great dip or sandwich drizzle — double the batch and keep some in the fridge for later!
