

Harmless Tom Yum Chicken Soup with Culley's No Fish Sauce
Broth:
- 4 cups of water
- 20g of vegan chicken stock powder (we use Massels)
- 3 small shallots roughly chopped
- 2 Stalks of lemongrass or 1/4 cup chopped
- 2cm piece of galangal (If you can’t find sub for ginger)
- 3 cloves garlic
- ¼ cup kaffir lime leaf (find them in a jar at new worlds)
- 2 tbsp chilli & soybean paste
Soups add ins:
- 150g Harmless Chicken chopped into cubes
- 150g Oyster mushroom (or any mushroom)
- 1 Tomato chopped into 12 wedges
- 3 tbsp Culley's No-Fish Sauce
- 1 tsp sugar
- 100mls coconut cream
- 3 tbsp lime juice
- Handful of chopped coriander to garnish
Instructions:
- Heat a pot with a small amount of oil
- Make the stock up into a measuring cup
- Prepare the rest of all the broth ingredients into a bowl
- Add prepared ingredients into pot and simmer for 1 minute
- Add stock and simmer for 10 minutes
- Add chopped mushroom, tomato and Harmless Chicken and simmer for another 10 minutes
- Add sugar and No -Fish sauce, simmer for 1 minute
- Add lime juice and coconut milk
- Simmer for 2 minutes
- Serve in a bowl with fresh coriander
